Black Bean Brownies
3 Cups black beans
1/4 cup olive oil
**Blend these ingredients in blender until smooth, then pour in large mixing bowl and add the following ingredients:
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup cocoa powder
3/4 tsp salt
1 1/2 tsp vanilla
1 cup honey
6 Tbsp natural peanut butter
1/2 cup chocolate chips
Spray 9X9 pan and bake at 325 for 60 minuets (or until toothpick comes our clean, do not over bake)
Store in fridge after cooled.
Banana Nut Bread (with no sugar)
Serves 12; one slice each
1 3/4 cups whole-wheat flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup honey
1/4 cup olive oil
1/2 cup egg substitute
3 medium, very ripe bananas, mashed
1 tsp vanilla extract
1/4 cup chopped pecans
Preheat oven to 350F. Spray 9X5 inch loaf pan with cooking spray; set aside.
Stir together whole-wheat flour, baking soda, cinnamon and salt with wire whisk in medium bowl; set aside.
Mix honey and olive oil together in medium bowl until well combined. Add egg substitute; mix well.
Add banana and vanilla; mix well.
Blend in whole-wheat flour mixture and nuts.
Spread batter in prepared pan. Bake 55-60 minutes or until wooden pick inserted in center of loaf comes out clean.
Cool in pan on wire rack 20 minutes before removing from pan and enjoy!
Need Something Sweet?-
Add fresh fruit (I like strawberries and
blueberries) to organic vanilla low fat
yogurt. Makes a light dessert…and
looks pretty, too. Serve in a fun sherbet or sorbet glass!
Summer Berry Pie
3/4 Cup Dates2 Cups AlmondsPut almonds into food processor and blend until almonds are chopped fine. Add dates and blend with nuts until mixture is crumply. Press mixture into pie plate. Lightly spray the pan with oil. Filling:
Enough fresh strawberries to fill the pie (raspberries and blueberries are good too) Sauce:3/4 Cup Strawberries2 T. agave nectar
Blend and pour over the strawberries to coat them. Refrigerate.
Banana Ice Cream
Looking for a cool and sweet treat that is not loaded with sugar? Try this…cut up some bananas in slices and freeze them, then just before you are ready for your treat, take them out of the freezer and throw them in a blender or food processor, blend until smooth and you have banana ice cream. If it is a little thick, add some yogurt. Enjoy as is, or get creative ad add some peanut butter, other nuts/seeds, or strawberries to give it a little extra flare.
